Messermeister Meridian Elite fully forged cutlery is made from a high carbon molybdenum/vanadium no-stain x 50 CrMoV 15 professional tool steel. This steel is hard enough so it will hold its edge for a very long time, yet it has the elasticity so that it can be realigned or easily resharpened. It also has a superior cutting edge; with Messermeister's extra three step sharpening process it has been called the sharpest forged knife available.

Meridian Elite knives also feature a bolster-less edge, which allows you to re-sharpen the entire length of the blade from point to point without creating an indentation by the bolster. The cambered edge also allows for a spectacular rocking action verses the traditional lift chop method.
